Baked Salmon

1+ pounds of fresh salmon
oil of choice

Get very fresh sustainable farmed or line-caught wild salmon fillets or steaks, 1.25 pounds will serve two people with leftovers cold on warm rice with a squeeze of lemon, or made into a quick fish salad a la tuna.

(It just doesn’t taste the same frozen. I’ll skip eating it if it isn’t fresh.)

Preheat the oven to 450F or even 500F. Oil a roasting pan or, for easier clean up, line a roasting pan with aluminum foil. and put a small blurp of grapeseed oil on the bottom. Place the fish on the oil, skin side down the pieces have skin. Simply roast for 12-15 minutes. You want it a bit flaky, not bright orange in the middle but still very moist, juuuust this side of done.
